Turkey Meatball Recipe
With sides: Kale chips & Garlic mashed potatoes

Ingredients:
Mushrooms
Onions
Eggs
Olive oil spray (can also use canola, avocado, etc.)
Italian breadcrumbs
Ground turkey
Marinara/tomato sauce
Seasonings: black pepper, salt, garlic powder. Recommended: Italian herb blend
Additional ingredients for the sides (optional):
Kale chips:
Bag of Kale (any kind is fine, but I prefer curly kale)
Olive oil
Optional: chopped mushrooms
Seasonings: salt, black pepper and garlic powder
Garlic Mashed potatoes:
Potatoes (I prefer red potatoes)
Milk (can substitute non-dairy like almond, soy, etc.)
Plain Greek yogurt (can be nonfat)
Seasonings: black pepper, garlic powder, salt, Italian herb blend
Cooking steps:
Turkey Meatballs: In a large pot, fill it up at least ½ way with water and place on the stove to boil. Preheat oven to 400 degrees Fahrenheit
Spray 2 large pans with non-stick cooking spray (I prefer olive oil non-stick spray)
While the water is getting hot and the oven is preheating, start prepping pans. First I start with the meatballs since they take longer.
In a large bowl, combine these ingredients:
¼ chopped mushrooms
¼ chopped onion
1 egg
1 cup Italian breadcrumbs
1 cup marinara/tomato sauce
1 Tsp. of: salt, black pepper and garlic powder
Combine all ingredients, thoroughly mixed. Using a spoon or 1 tbsp. Sized scoop, make evenly sized meatballs on the pan. Put in the oven and bake for 15-20 min. (baking times can vary upon oven)
Kale Chips: On the sprayed sheet pan, spread out the kale evenly into 1 layer (if too much on top of each other, it may not cook evenly). Once you layer the kale, add:
Drizzle 1 Tbsb. Olive oil
¼ cup chopped mushrooms (can also add peppers, onions, etc.)
¼ tbsp. Of the following: salt, black pepper and garlic powder
With your hands or tongs, evenly mix the kale chips. Put in the oven and bake for 8-12 min. (baking times can vary upon oven and desired crispiness levels)
Garlic Mashed Potatoes: Once the water is boiling, drop in the washed and cut potatoes (recommended: cut the potatoes into ⅓ or ¼ to cook faster). Once in boiling water, cook for 15-20 min, stirring occasionally. To check if they are done, pull out a potato piece and stick a fork in. If the fork goes in all the way and it easily breaks apart, it it most likely ready. Once ready, drain the potatoes in a strainer and add back to the original pot. In the pot with the potatoes combine and mash:
¼ cup milk
1-2 Tbsp. plain Greek yogurt
Seasonings: ½ tbsp. Black pepper, salt, garlic powder, Italian herb blend (recommended: ¼ Tbsp. ranch seasoning from Trader Joe’s)
